| refined sugar — Beat with the yolks; more loaf sugar if needed. | sweetener |
- Beat the egg yolks with refined sugar and grated nutmeg.
- Rub loaf sugar on lemon rind to extract its juice, then put that sugar with cinnamon and the barley wine or strong ale into a saucepan and bring to a boil.
- Remove from the fire, add the gin if using, pour gradually into the yolks while stirring constantly, and sweeten further if needed.
