| 1 wine-glass | Jamaica rum | base |
| 1 pint | Martell brandy | base |
| 1 pound | sugar | base |
| 3 quarts | milk — rich milk | dilution |
| 10 eggs | egg — eggs | other |
- Beat the yolks with the sugar until dissolved.
- Pour in the brandy and Jamaica rum, then the milk while stirring continually with a ladle to prevent curdling.
- Beat the whites and put them on top of the mixture, then serve.
