  1. Roast and mash the apples.
  2. Add the old ale, press and strain, then add grated ginger and nutmeg.
  3. Sweeten to taste, warm, and drink while warm.

This is a compact Victorian witness to a much older festive English apple-and-ale tradition.

The apple mass is strained after being mixed with ale, producing a smoother texture than some bowl variants.
