2 bottlessherry — pale dry sherrybase
3 bottlesSoda water — soda-waterdilution
1 tablespoonfulnoyeau modifier
0.5 pintPaxaretta wine modifier
1 quartice — shaven iceother
  1. Combine the pale dry sherry, Paxaretta wine, lemon juice, and noyeau.
  2. When ready to serve, add the soda-water and shaven ice.

Ice: Quart shaven ice

This is a good witness to the darker sweet-sherry adjuncts that still circulated in cup making.

The cup is finished at the last moment to preserve aeration and chill.
