Cooling Cups and Dainty Drinks by William Terrington (1869, p.186) — Terrington 1869
| 1 pint | ale — good ale | base |
| 1 glass | sherry | modifier |
| 1 round | buttered toast | other |
| 1 oz | Mixed spice | other |
| 1 oz | sugar | sweetener |
- Warm the ale and add the sugar, mixed spice, and sherry.
- When nearly boiling, pour the mixture over a round of buttered toast and serve hot.
Garnish: Buttered toast.
This preserves one of Terrington's more domestic-looking hot-beer compounds that still sits inside the cup tradition.
The toast is part of the drink's structure, not just a garnish.
