2 wine-glasseswhite wine other
2 ozsugar — loaf-sugarsweetener
  1. Put the loaf-sugar and white wine into the boiling milk.
  2. Boil for a few minutes until a light floating curd appears.
  3. Strain off the whey and serve it hot.

This is a good domestic restorative witness and part of the book's broader beverage ecology.

The whey, not the curd, is the intended drink.
