  1. Place mint in a tall glass, add sugar and brandies, and fill with shaved ice.

  1. Place mint at the bottom of the serving goblet with sugar and a little water, then muddle or bruise the leaves.
  2. Add cognac and peach brandy, fill with finely crushed ice, and jiggle with a long spoon until the goblet frosts.
  3. Thrust in a bouquet of tender mint shoots and serve with a short straw.
