| 3 whole | egg — eggs | base |
| 2.5 wine glass | Santa Cruz rum | base |
| 2 quart | milk | dilution |
| for ornament | decorative sugar — coloured sugars | sweetener |
| 6 ounces | sugar — white sugar | sweetener |
- Beat the yolks and whites separately, mix all ingredients except the whites in a large bowl, let the whites float on top, ornament with coloured sugars, cool in ice, and serve.
Garnish: Coloured sugars
Ice: Cooled in a tub of ice
