| 3 whole | egg white — egg whites | other |
| nutmeg — A little grated nutmeg on top if iced. | other | |
| 4 ounce | sugar — powdered loaf sugar | sweetener |
- Beat the yolks and sugar well together.
- Add the brandy or Jamaica rum mixed with the bitters and the Madeira or brown sherry.
- Whip the whites to a stiff froth and beat them into the mixture, then stir in the milk.
- Ice if wished and grate a little nutmeg on top.
