| 2.5 quart | milk — Two quarts boiled, plus half a pint cold milk mixed with eggs. | base |

- Boil milk with lemon peel and sugar, remove peel, take off the fire, stir in eggs mixed with cold milk, keep warm without boiling, add rum and brandy gradually, froth, and serve quickly in warm glasses.
