- Cool a lemonade glass with fine ice, then place fine ice, lemon juice, sugar, Curacao, and egg white in a mixing glass.
- Shake well, strain into the cooled glass, fill with syphon seltzer, and serve.
Ice: Fine ice
This is useful because it keeps the restorative egg-white-and-seltzer field visible outside the better-known fizz names.
The drink is defined by the shaken egg-white base and the final seltzer lift.
