| 1 dash | Peychaud's bitters | bitter |
| 2 pony | Pineapple juice — Unsweetened pineapple juice | dilution |
| 1 whole | egg white — Egg white | other |
| 1 tsp | sugar — Sugar | sweetener |
- Dissolve the sugar in the pineapple juice.
- Add lime juice, bitters, and rum, then stir or preferably shake with several lumps of ice.
- If desired, include egg white for extra smoothness, then strain into a cocktail glass and serve.
